Could some of you share your favorite game or fish recipes? My wife has some severe medical problems and I do the cooking. I am especially interested in pheasant, deer and fish recipies. Thanks, michfish

The only way I make up my pheasant is by grilling it. I marinade it in a mesquite marinade by McCormick for a minimum of 4 hours (the package says 15 mins, but I think it tastes better when I get it ready in the morning). No other seasoning is needed.
As for fish, again, I marinade them and put them on the grill. This marinade I make, using butter and lemon juice (put it in the microwave to melt the butter down). I put the fish fillets in a cake pan and spread the marinade over them. Sprinkle some lemon pepper on top, cover the pan with tin foil, and put on the grill. And let it cook until the juices are almost gone, then enjoy.

Heh, my Grandmother made the best pheasant I ever ate. She fryed it like chicken and then put it in the over to bake until it was tender. Don;t remember any spices or anything but roll it in a mix of flour, salt and pepper and then fry it til brown then put it in the over.

My favorite of my dad's pheasant is brown it in a fryin pan like chicken, then slow cook it ina fryin pan or a crock with cream of mushroom on it. melts in your mouth.

For pheasant i think the easiest and best way is to cut it into chunks and mix some flour and a bunch of seasonings of your choosing and bread it up then put it in a fryin pan and fry it up. I like to sprinkle some of the seasoning mixture into the oil while the pheasant is cooking as well. I think it helps to cook some of the flavor into the meat.

If you like something with a little kick, try pheasant poppers. Cut pheasant breast into quarter size pieces, wrap half of a bacon strip around it with some cream cheese and jalapeno slice. Hold it together with a toothpick. Grill or broil for 15 min or until the bacon is done.
Good way to use shot up birds.

Breaded pan fried and oven finished is my favorite. Olivia down at the New Horizon Lounge in Lake Preston does a Pheasant Pot Pie that is outstanding. If you ever go in there when she is working try to get her reciepe. Also crock pot with cream of mushroom on toast or potatoes is good. Good luck, Bo
